Easy Healthy Snacks

Okay y’all I am a horrible eater. And I hate to think that I will pass that trait on to my Luke Danger! So I’ve been trying to be really intentional about making sure he has lots of fruits and vegetables, not just bread and potatoes like his mama. He loves muffins, and while I don’t think they’re horrible, I was trying to find an alternative. I found a recipe online, and edited a little to make them exactly what I wanted. Luke loves them! They are super easy to make and very inexpensive and full of good things he doesn’t always want to eat. So if you’re looking for a way to trick your babies into eating good-for-you foods, these might be perfect!

What you’ll need:

1 Sweet potato

1 banana

1/2 peanut butter

1/2 cup of chocolate chips

1 handful of spinach


What to do:

Bake your sweet potato and mash it. I have an incredible blender, so I purée it in there. Then add mashed banana, peanut butter, and spinach. Again I blend it in my blender so there is no need to chop the spinach. If you’re mixing with a mixer, chop spinach finely. Add chocolate chips. Fill greased mini cupcake pan. Should make at least 18. Bake at 350 for around 10 minutes.
